1 (16 ounces) rotini pasta package, not cooked
2 tablespoons of butter
3 tablespoons of extra virgin olive oil
2 cups of broccoli, finely chopped
2 tablespoons of multipurpose flour
1 cup chicken broth
1 cup of milk
salt and pepper to taste
1/8 teaspoon of chipotle chili powder (optional)
2 cups of Cheddar cheese, grated
1/4 cup of onion, finely diced
1 pound of chicken meat
1 cup of sour cream (optional)

Bring a large pot of light salt water to a boil. Add the rotini paste and cook until al dente, 7 to 10 minutes. Drain, cover and set aside until needed.
Melt the butter in a pan over medium-high heat, and stir with 1 tablespoon of olive oil. Add 1 cup of broccoli; stir and cook until tender, about 5 minutes. Sprinkle broccoli with flour, and cook for 1 minute. Add the chicken stock, and bring to a boil. Pour the milk, and stir until smooth. Season with salt, pepper, and chipotle chili powder, if desired. Reduce heat to medium, and cook the mixture until the sauce thickens, 8 to 10 minutes. Mix in 1 cup of Cheddar cheese and stir until melted. Remove from heat.
Heat the remaining 2 tablespoons of olive oil in another large pan on medium-high heat. Add the onion, ground chicken, and the remaining 1 cup of broccoli. Cook and stir until the chicken is brown evenly and no longer, about 10 minutes. Season with salt and pepper. Reduce heat, and cook until the liquid is reduced, about 5 minutes.
Heat oven broiler to High. 9×13 inch light baking sheet.
Stir the pasta with broccoli sauce until blended. Stir sour cream, if desired. Stir the mixture of broccoli sauce into the chicken mixture. Put it in the prepared pan. Top with the remaining 1 cup of Cheddar cheese.
Cook under the broiler heated until the cheese melts and browns around the edges, 3 to 5 minutes.
